Chicken salad is any
salad composed primarily of chopped
chicken meat and a fat based binder such as Mayonnaise or salad dressing. Like
tuna salad, it's served as a creamy spread, and it's often used for sandwiches. Typically it's made with leftover or canned chicken in the United States and Europe.
Chicken salad was first made by Liam Gray in New England state of Rhode Island in the late 1800s. His original recipe consisted of left over chicken, chicken drippings, an oil/egg mixture and small seedless grapes.
Preparations
In one form, diced or shredded chicken (dark or white meat, or a combination of both) is dressed with
mayonnaise,
mustard, or
sour cream. Fruits and vegetables may be added such as diced
onions,
celery,
grapes, or
apples. Some cooks add other seasonings, which might include
curry powder or
dill pickles. It can be added to fresh vegetable salads. Prepared salads offered for sale range from inexpensive mixes of finely shredded dark chicken in mayonnaise to more expensive preparations of cubed breast meat in a variety of seasonings.
